Enjoy the wholesome flavours of the Vipava Valley and the relaxed local atmosphere. Meet the valley's winemakers, cheesemaker, pršut producers and culinary masters. Hear their interesting stories and taste their best wines and dishes. Across two days, a local guide will show you the culture and history of the Vipava Valley up close, characterized by the land's cuisine and winemaking.
1st Day
Visit a heritage organic farm in a remote Vipava Valley village, tasting pristine goat cheese. The welcoming owners will guide you around, presenting you with the curious story of this nearly forgotten ancient place revived just recently. The walk is followed by a tasting of wines in a local winery. In the beautiful ambience of its tasting room, the rich history and fabulous legends of the Vipava Valley will be told while sampling exceptional wines.
Before dinner, you'll be comfortably accommodated in the boutique Hotel DAM in Kromberk. In the evening a phenomenal culinary experience awaits in their restaurant, acclaimed recipient of a Michelin star. The chef will prepare a special tasting menu for the occasion, paired with premium wines from the richly stocked wine list. The merrymaking can go on long into the night.
2nd Day
Visit a local prosciutto producer and see how genuine Vipava Valley dry-cured prosciutto is ripened, and what role the burja wind plays in this noble process. Taste some exquisite dry meats, washing them down with a glass of Klarnica, a rare indigenous old variety. From here we'll be taking you to the Sinji Vrh Guesthouse, where you can enjoy tremendous views and more exceptional flavours. At the mountaintop where the gaze spills across the entire Vipava Valley, reaching past the Kras all the way to the Bay of Trieste, you'll be treated to a tasting menu and a selection of Vipava Valley wines. At the valley's other side another viticultural gem awaits, award-winning biodynamic wines and the story of their traditional cultivation integrated with contemporary winemaking principles. Socializing with the good-natured winemaker and the tasting of his specialties is a fond memory to keep.
