Say Cheese
Dairies in the Vipava Valley are few and far between. Traditionally, milk was produced in small quantities only for personal needs, and so by extension cheese was scarce. Today there are a few top diaries in the region, whose cheeses round out the rich local gourmet offering.
Kmetija Slejko
The farm is one the largest cow milk producers in the Vipava Valley. Fresh milk is delivered to milk vending machines throughout the Valley. Production of cheeses, yoghurt, cottage cheese and mozzarella. In addition to raising cattle, the farm is involved in honey production and wine-making.
Ovčereja Kandus
The Kandus farm produces sheep milk products: cheese, cottage cheese and yoghurt. Its offering is complemented by goat milk and goat yoghurt. Products are largely sold on site at the farm and at farmers’ markets in the vicinity.
Sirarstvo Orel
The farm processes raw sheep milk into full-fat semi-hard cheese, albumin cottage cheese and whey. Cottage cheese is the base of herbal spreads. A side operation is the production of wine and growing of persimmons and cherries. Products are available for sale at the farm, on farmers’ markets and various events.
Domačija Koren
The farm is situated on a lovely site: the courtyard overlooks the fields of the Vipava Valley. Producing full-fat hard cow cheese, the offering also comprises raw milk, fresh cottage cheese and whey.

The farm is focused on organic animal farming, and produces dairy products including cheeses, drinkable yoghurt, albumin cottage cheese, spreads and whey. Products are for sale at the farm and in selected stores.

Kmetija Hubjani
The family farm dating back to 1768 is one of the oldest farms on the Banjšice Plateau. In 1997 the family opened a cheese dairy; today they specialise in organic milk production and processing. Visitors can purchase different cheeses and other cow milk products.
The flavour of Golden Ring cheeses is sharpened in the pitch black at a constant temperature in a high moisture environment, namely in the abandoned tunnels of a former Italian guardhouse dating back to the start of the last century.
MoreThis organic farm and dairy manages a herd of autochthonous Karst sheep and Drežnica goats. Both breeds produce very rich milk that lends itself to the production of a range of dairy products reflecting the quality of the pristine grazing areas and the animals themselves.
